🔥 Royyala Vepudu – Spicy Stir-Fried Prawns with Chili and Garlic

If you're a seafood lover with a soft spot for bold South Indian flavors, Royyala Vepudu is a dish you simply can't miss. This spicy stir-fried prawn delicacy from Andhra cuisine brings together the heat of red chilies, the punch of garlic, and the savory depth of Indian spices in every bite.

Let’s dive into the recipe and learn how to bring this flavorful dish to life in your own kitchen.

🧄 Ingredients

For marination:

  • 500g prawns (cleaned and deveined)

  • ½ tsp turmeric powder

  • ½ tsp red chili powder

  • 1 tbsp lemon juice

  • Salt to taste

For the stir-fry:

  • 2 tbsp oil (preferably sesame or sunflower oil)

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1 sprig curry leaves

  • 1 medium onion, finely chopped

  • 8–10 garlic cloves, crushed

  • 2–3 green chilies, slit

  • 1 tsp ginger-garlic paste

  • 1 tsp red chili powder (adjust to taste)

  • ½ tsp garam masala

  • Fresh coriander leaves for garnish

👩‍🍳 Method

1. Marinate the prawns

Combine prawns with turmeric, red chili powder, lemon juice, and salt. Mix well and let it rest for 15–20 minutes. This step not only flavors the prawns but also helps reduce any fishy odor.

2. Sauté the aromatics

Heat oil in a wide pan. Add mustard seeds and let them splutter. Add cumin seeds and curry leaves, followed by the chopped onions. Sauté until the onions are golden brown.

3. Add garlic and chilies

Toss in the crushed garlic and slit green chilies. Sauté for a minute until the garlic turns aromatic and lightly golden.

4. Spice it up

Add ginger-garlic paste and cook until the raw smell disappears. Stir in red chili powder and garam masala. Mix well to form a thick spice base.

5. Cook the prawns

Add the marinated prawns to the pan. Stir-fry on medium-high heat for 6–8 minutes or until the prawns turn pink and are cooked through. Do not overcook – prawns cook quickly and can turn rubbery if left too long.

6. Finish and serve

Garnish with fresh coriander leaves. Serve hot with steamed rice or as a spicy starter.

🍽️ Serving Suggestions

  • Serve with plain rice, lemon rice, or even roti.

  • For a complete Andhra-style meal, pair it with dal and avakaya (mango pickle).

💡 Tips

  • Always use fresh prawns for best flavor.

  • Adjust chili levels based on your heat preference.

  • You can add a splash of lemon juice at the end for a tangy twist.

Royyala Vepudu is more than just a prawn dish – it’s a celebration of Andhra heat, spice, and soul. Whether you're making it for a special dinner or just craving something spicy and satisfying, this recipe delivers on all fronts.
